Vegan Lasagna with a View

About the Recipe

Cook it when you are sure that you have the proper view for it.

Ingredients

  • One can of Coconut Milk

  • Lasagna Sheets (without egg)

  • 2 cans of Chopped Tomatoes

  • 2 medium size Carrots (color up to you)

  • 2 medium size Onion (or 1 big) (or 4 small)

  • A lot of Garlic

  • 400g of cooked Spinach

  • 2 or 3 tablespoons (the big one) Maïzena / Flour

  • Fake Minced Beef for the Bolognese

  • Nutmeg

  • Cumin

  • Black Pepper

  • Salt

  • Laurel leaves

  • Thyme

  • A bit of Chili

  • A little bit of Olive Oil


Preparation

Step 1


Find a good view. It can be mountains, the beach or whatever you feel like. But it has to be a good view. This is very important.


Step 1


Let's make the Bolognese Sauce.

In a pan, warm up some Olive Oil and cook chopped Garlic & 1 of the Onions slowly until the Onion is transparent.

Add chopped Carrots, and cook them until they are soft.

Add the Vegan Minced Beef and ALL THE CONDIMENTS (Cumin, Laurel, Thyme, Salt/Pepper, little bit of Chili).

Cook for 5min and add the 2 cans of Tomato Sauce! Leave it in low fire for a while (it will taste good).


Step 2


Spinach filling !

Cook Garlic & finely chopped Onion again in another pan with yet more Olive Oil until transparent. Add Salt, Pepper & Nutmeg.

Add the Spinach and cook it for 7 minutes.


Step 3


Béchamel with the "thingy".

In a small pot, put the Coconut Milk and Half of the same Can of Water.

Add 3 spoons of Flour or Maïzena. Add 1 tablespoon of Olive Oil, Salt, Pepper & Nutmeg. Mix well.

Put it in slow fire and DON'T STOP MIXING IT until it starts thickening.

Keep stirring it for about 3 more minutes.

Take it out of the heat.


Step 4


Lasagna time.

In an Oven glass recipient with High walls (we forgot the name in English), put a thin layer of delicious Bolognese Sauce, a layer of Lasagna Sheets, a layer of Spinach Filling with some Béchamel sauce, a new layer of Lasagna, some more Bolognese and so on and so on until you run out.

Make sure you keep some Béchamel for the finishing touch.

The last layer has to be Bolognese with some Béchamel on the top. That's the law.


Step 5


Put it in the Oven for 20-25 minutes until the Lasagna Sheets are cooked & the Béchamel gratin.
