GRONNINGEN's MUSTARD SOUP

Ingredients

  • MUSTARD

  • Actually, good mustard. If you're not making it yourself, get yourself some "old school" wholegrain mustard. You can mix it with stronger fine-grain mustard if you want.

  • Vegetable stock

  • Leek

  • Onions

  • Garlic

  • Butter - can be vegan

  • Cream - can be vegan

  • Bacon (optional but non-vegan)

  • Cornstarch (optional)

Preparation

Step 1


Finely cut all the vegetables ! Then, fry them gently in the pan until it's softened and looks tasty.


Step 2


Cream, stock & MUSTARD in the pot and let it simmer for a while. Let it get the tastes in.


Step 3


Blend the soup with a food processor, then you can complete it with a bit of water and Cornstarch to give it the consistency you want.


Step 4 (optional & non-vegan)


You can fry some bacon on the pan and incorporate it now in the soup if you're not vegan.
