About the Recipe
Adolf Henrik Lindstrøm was a Norwegian polar Chef.
Born in Hammerfest, all the way to the North of the North, he played a huge role on Arctic & Antarctic expeditions - including Amundsen's South Pole expedition - as the ship's Chef, a crucial member of the expeditions.
As well as a moral support for the crew, the expedition's Chef has the important mission of feeding them. Lindstrøm was always a popular Chef during all his voyages, thanks to his varied cuisine, bonhommie and, last but not least, lack of death on the ships he went on. We are talking about a time when many polar expeditions would suffer from Scurvy.
This recipe is one of his most beloved one. Biff à la Lindstrøm.

Ingredients
200g Minced Beef
1 Egg yolk
5cl Milk
+/- 1 tablespoon Onions
+/- 1 tablespoon Pickled Beetroot
+/- 1 tablespoon Pickled Cucumber
+/- 1 tablespoon Capers
1 Potato
A bit of Salt
A bit of Pepper
A bit of Butter or Oil
Preparation
Step 1
Boil this potato. While you wait, cut all the vegetables as finely as you can. Use a blender if you have one !
If you're on a ship locked in ice somewhere in the Arctic ocean, do as well as you can with what you have.
Step 2
Cut the potato in small dices.
Step 3
Mix everything together ! Meat, egg yolk, salt & pepper, at the rest.
Step 4
Make some patties with the mixture, put them in the fridge to rest for about 20min, or outside on deck but not too long so it doesn't freeze.
Step 5
Cook the patties ! Medium fire, 3-4min per side. I mean you know how to do that already, I guess.
Step 6
Enjoy !
Easy, right ? Well, that's kind of the point when you're cooking for a polar expedition : to make something tasty, nutritious & easy for a lot of people.
I guess you could serve it with some potatoes. Up to you !
Maybe one of these days we'll try to make a Vegan version. Shouldn't be too hard, I suppose ?
